Ginger, along with turmeric and cardamom, belong to the Zingiberaceae botanical family. Often referred to as Ginger root, Ginger is actually not a root but a rhizome or modified underground stem. Its knobby shape and firm striated texture is covered by a brownish skin which is thin when the rhizome is harvested early and thick when mature. The flesh of Ginger is fibrous and can be white, yellow or red depending on the variety.
